Eat Drink Think France

 

Wine education is not about books and learning; for me, it is about experience.  I will spend a couple of weeks touring Loire, Champagne, Burgundy and Jura with Ed & Barbara Addis of Wine Traditions in April, and when I return, I want to share this experience with you.  I will talk about the wineries and the wine, sample the foods and the wines from the regions that I saw, and give some cultural context to your table.

The Sea

This is a class we have done before, but I never tire of it because it is the marriage of my two favorite places—Provence and Newport, and my favorite food—fresh fish.  Bouillabaisse is one of the world’s greatest delights for me, fresh seafood, cooked slowly in a rich and mouth watering broth, with the sweet subtle flavors of fennel and saffron, and the best part is the rouille spread on a thick crusted piece of toasted pain au levain.  Seriously, this is heaven, and truth be told, it is fairly easy to make.  Join us to learn how to clean a whole fish and put together this beautiful dish.

Spring Cooking School with Chef Julien Charvet: Bringing the Market Indoors

 
 

Chef Julien Charvet is a self-taught French chef who has been in the kitchen all of his life.  First for his parents, in one of their many restaurants in France and abroad, including a Michelin one-star restaurant in Paris, and then in one of his various restaurants in Paris, Chateauneuf du Pape, and Avignon.  His cuisine is varied, from a traditional French menu to sushi to an open teaching kitchen in the center of les Halles, but for Chef Julien it is not about the ingredients, it is about people.

Cooking is about friendship, about the satisfaction of feeding and pleasing people, and about bringing people together around a table enjoying life.  For Julien food should remain simple, good ingredients put together well, but not complicated, using the ingredients of the season.  This philosophy about food has remained constant throughout his career, even before it was as fashionable as it is now.   

Julien’s food is delicious, but his gift is teaching and inspiring you to make it yourself.  He will not do it for you, but rather inspire you to do it, guiding you to the completion of a great meal and teaching you a few kitchen tricks along the way.

Each Class includes instruction, a full meal, and a complimentary wine tasting.

 My mom taught me how to cook, and she shared with me the wonderful sense of satisfaction that comes when someone smiles because what you made tastes so good.  It is what motivates me each year to reproduce those cookies and deliver them to my friends and family, and to share them with all of you.  If you would like to learn how to make some traditional Italian cookies (these are not your frosting covered sugar cookies!), please join me Tuesday evening.  We will do some baking and have a glass of wine to toast our moms for teaching us how to love.

Renown chef, cookbook author, winery owner, and, to my good fortune, very good friend, Maria Helm Sinskey will be here at Newport Wine Cellar & Gourmet sharing her secrets to simple and fast, beautiful appetizers & talking about the wines from Robert Sinskey Winery.  Don’t know her??? Where have you been?  Maria attended pastry school in Denmark and then returned to San Francisco to work as Chef at several noteworthy restaurants: Boz Scagg’s Blue Light Café, the venerable Sherman House – a Relais & Chateaux Hotel, and Plumpjack Café.  In 1999, she began a life combining family, food and wine in the Napa Valley.  She is a lover of food and a fount of gratitude, knowledge, and laughter—appreciating all the good things in life and sharing those things with us.  Her accolades are many: 1996 Food & Wine Magazine Best New Chef, SF Magazine Rising Star Chef, SF Chronicle Rising Star chef and appeared on many PBS and Food Network Shows.

Her first cookbook, “The Vineyard Kitchen: Menus Inspired by the Season”, published by HarperCollins was released in September 2003. "Family Meals: Creating Traditions in the Kitchen", published by Oxmoor House, followed in November 2008. Maria’s mantra, “Eat seasonally, drink good wine and live a long and prosperous life.”

Her cookbook will be available for purchase & signing (a great gift for a chef in your life), and the wines will be open for sampling & also available for purchase.
