Wine Class—Understanding Terroir

Wine Class—Understanding Terroir

There is so much discussion about place of origin, but what is the impact of place, climate, soil, and culture on the flavor of wine?  Many argue that terroir is impossible to define or identify, so let’s talk about this very European idea of winemaking.  Hopefully, we can come to some agreement on the significance of this evasive term.

To tackle this conundrum, we will sample a single varietal from 4 distinctly different regions.

Eat Drink Think France

Wine education is not about books and learning; for me, it is about experience.  I will spend a couple of weeks touring Loire, Champagne, Burgundy and Jura with Ed & Barbara Addis of Wine Traditions in April, and when I return, I want to share this experience with you.  I will talk about the wineries and the wine, sample the foods and the wines from the regions that I saw, and give some cultural context to your table.

Spring Cooking School with Chef Julien Charvet: The Sea

The Sea

This is a class we have done before, but I never tire of it because it is the marriage of my two favorite places—Provence and Newport, and my favorite food—fresh fish.  Bouillabaisse is one of the world’s greatest delights for me, fresh seafood, cooked slowly in a rich and mouth watering broth, with the sweet subtle flavors of fennel and saffron, and the best part is the rouille spread on a thick crusted piece of toasted pain au levain.  Seriously, this is heaven, and truth be told, it is fairly easy to make.  Join us to learn how to clean a whole fish and put together this beautiful dish.

Spring Cooking School with Chef Julien Charvet: Bringing the Market Indoors

Chef Julien Charvet is a self-taught French chef who has been in the kitchen all of his life.  First for his parents, in one of their many restaurants in France and abroad, including a Michelin one-star restaurant in Paris, and then in one of his various restaurants in Paris, Chateauneuf du Pape, and Avignon.  His cuisine is varied, from a traditional French menu to sushi to an open teaching kitchen in the center of les Halles, but for Chef Julien it is not about the ingredients, it is about people.

Cooking is about friendship, about the satisfaction of feeding and pleasing people, and about bringing people together around a table enjoying life.  For Julien food should remain simple, good ingredients put together well, but not complicated, using the ingredients of the season.  This philosophy about food has remained constant throughout his career, even before it was as fashionable as it is now.

Julien’s food is delicious, but his gift is teaching and inspiring you to make it yourself.  He will not do it for you, but rather inspire you to do it, guiding you to the completion of a great meal and teaching you a few kitchen tricks along the way.

Each Class includes instruction, a full meal, and a complimentary wine tasting.

$125/person plus tax

In a little over a month, the Grower’s Market will be in full force out doors, but I am impatient.  We want to inspire you now to head to the table with the bounty that spring uniquely offers.  The flavors of spring are varied but all about new starts, so we are going to select a fresh flavor from the land, the farm, the air, and the sea to build a menu and teach you a few critical cooking skills for success in your kitchen.

I am thrilled to have Chef Julien back in the kitchen with us here at the Newport Gourmet.  Please tell your friends, join us for fun learning, laughs, and a little work, with a great reward.  This is the treasure of cooking—the gratifying work of sharing and enjoying a meal.  All meals are accompanied by a wine pairing tasting & discussion.

Spirits Class: 3rd Annual Christmas Cup, Scotland vs France

Spirits Class: 3rd Annual Christmas Cup, Scotland vs France

Our weekly wine seminar, this Wednesday will not be about fermented grapes, but rather those that are distilled.  This is an ongoing conversation here at NWC&G, and I am eager to hear your input. What is your brown drink of choice?  Are you a Scotch lover? Drink it neat? or with a bit of water? Or perhaps you prefer Cognac?  I have always thought that they have some interesting characteristics that overlap.  Join us in exploring that intersection.

Cooking Class: Italian Holiday Cookies with Maria

For the Love of Cookies!

My mom taught me how to cook, and she shared with me the wonderful sense of satisfaction that comes when someone smiles because what you made tastes so good.  It is what motivates me each year to reproduce those cookies and deliver them to my friends and family, and to share them with all of you.  If you would like to learn how to make some traditional Italian cookies (these are not your frosting covered sugar cookies!), please join me Tuesday evening.  We will do some baking and have a glass of wine to toast our moms for teaching us how to love.

Paella Cooking Demo

Learn how to make this simple and delicious traditional rice dish and sample it with a complementary sample of Spanish wine.

Spanish Natural Wine Tasting with Alvaro & Ayana of Selections de la Vina

2-5pm in the wine shop, no rsvp required

While we work at our cooking task, you can go next door to the wine shop and enjoy a complementary tasting of some wonderful natural Spanish wines and meet the knowledgeable and charming couple responsible for getting them to us here in Rhode Island.  This is a chance to learn and enjoy!

Alvaro and his wife Ayana have put their efforts into importing wines from Spain that are both delicious and also naturally produced.  What this means is that the wines are farmed and vinified with as little intervention and manipulation as possible.  That means they are healthier for you, they are truer to their expression of terrior, and they are responsibly produced with as little impact on our world.  All of this means that you should support these wine makers!

Complimentary!

10% off all of Alvaro & Ayana's wines purchased at the tasting
