Chef Julien Charvet is a self-taught French chef who has been in the kitchen all of his life. First for his parents, in one of their many restaurants in France and abroad, including a Michelin one-star restaurant in Paris, and then in one of his various restaurants in Paris, Chateauneuf du Pape, and Avignon. His cuisine is varied, from a traditional French menu to sushi to an open teaching kitchen in the center of les Halles, but for Chef Julien it is not about the ingredients, it is about people.
Cooking is about friendship, about the satisfaction of feeding and pleasing people, and about bringing people together around a table enjoying life. For Julien food should remain simple, good ingredients put together well, but not complicated, using the ingredients of the season. This philosophy about food has remained constant throughout his career, even before it was as fashionable as it is now.
Julien’s food is delicious, but his gift is teaching and inspiring you to make it yourself. He will not do it for you, but rather inspire you to do it, guiding you to the completion of a great meal and teaching you a few kitchen tricks along the way.
