Ask any French woman, and she will tell you that she has her recipe for these delightful lofty cheese puffs.  They are a staple in France & they are simple to make.  You can make a batch & keep the formed puffs in the freezer to pop into the oven whenever you need them.  This is a life saver at the holidays when friends and family are popping over. I have been working on my gougère now for several years, and am eager to share with you the tricks I have learned.
