In this class we will continue honing your tasting skills and identifying the things you like about wines with a focus on the question of structure and ageability. For this discussion about structure, we will focus on Cabernet Sauvignon because it is a varietal that lends itself well to this conversation. What creates a wine’s structure, and why would a wine maker choose to do that? Well, it has to do with both the grape and its vinification; tannis, acidity, and technique all play a part.
