When asked if I like a particular wine or varietal, my answer is always the same—there is not a type of wine that I do not enjoy, as long as it is balanced. What does that mean? To me, and even in a more general sense it is about the components of wine being in harmony with one another: fruit, acid, alcohol, and structure. We are building on the conversation now. This class is learning to identify what balance appeals to you. We will taste a variety of whites and reds in the class.
